
Celery Root & Cauliflower Mash

NUTRITIONAL NOTES
CELERY ROOT: Celery root is a varietal of celery that grows with a very large bulb root. The bulb is high in fiber and Vitamin C, but low in calories, making it a good replacement for carbohydrate rich potatoes for those looking to decrease their caloric intake.
CAULIFLOWER: Cauliflower is an important part of the cruciferous vegetable group. High in Vitamin C, it provides a boost to your immune system. Studies have linked cauliflower to cancer prevention especially bladder, breast, colon, prostate and ovarian cancer. It also contains many antioxidants to help in detoxification.
Gluten-Free, Vegan Option
Serves 6
Ingredients:
1 bulb of celery root, peeled and cut into 1 inch chunks
1 head cauliflower, broken into small 1-inch florets
2 cloves garlic
1 cup chicken or vegetable broth
½ cup unsweetened almond milk, or other milk alternative
salt & pepper, to taste
parsley, chopped, for garnish
Directions:

After chopping celery root and cauliflower into similar size pieces, place chunks into a medium sized pot and add chicken stock, milk and a teaspoon of salt. Bring to a boil.

Turn heat down to medium, cover with lid and let simmer for 20-25 minutes, until cauliflower and celery root pieces are soft and mashable.

Strain vegetable pieces, reserving 1 cup of cooking liquid. Place vegetables in a blender or food processor with ½ cup cooking liquid and a pinch of salt and pepper.

Blend or process until smooth and creamy, adding more of the cooking liquid if needed.

Place on serving bowl and sprinkle with chopped parsley.
*Can be made 2-3 days prior to serving, simply reheat on the stove top.
