NUTRITIONAL NOTES

 

OATS: Scientifically proven, there are few foods better at combatting heart disease or diabetes.  Oats contain a unique fiber called beta-glucan;, eating just 3 grams a day can decrease your bad LDL cholesterol levels by 8-23%.  Highly significant if you take into account that a 1% decrease in LDL cholesterol lowers your risk of heart disease by 2%.

FLAX MEAL: Made from ground flax seed, flax is high in fiber and offers a high concentration of plant-based Omega 3 fatty acids, being good for heart health and brain function. Packed with anti-oxidants, research shows the flax helps prevent cancers like breast, prostate and colon cancer. 

CARROTS: High in Vitamin A and Vitamin K.  Carrots have a high beta-carotene content, which has important anti-oxidant benefits.  Recent studies have concluded carrots can help in reducing risks for cancer and cardiovascular disease.

Ingredients:

Batter:

1 3/4 cup rolled oats

1 1/2 cups gluten free baking blend flour

1/4 cup flax meal

1 tbsp baking soda

1 tsp baking powder

2 tsp ground cinnamon

1/4 tsp salt

1/4 cup protein powder (optional)

1 1/4 cup turbinado sugar

2/3 cup coconut oil

2 eggs

1 cup low-fat plain Greek yogurt

1/2 cup milk or nut ‘milk’

1 1/2 cups grated carrots

1/2 cup raisins

Topping:

2 cups walnut pieces

1/2 cup unsweetened shredded coconut

1/4 cup turbinado sugar

1 tsp ground cinnamon
