Ginger's Tropical Peach Granita




PEACHES: By making use of their own antioxidants, peaches help the body fight back damaging free radicals, a dangerous factors contributes significantly to cancer. The nutrients in peaches are great for skin health.  

COCONUT MILK: An excellent alternative to cows milk because it is easier to digest, coconut milk is high in nutrients such as Vitamin C and E to help strengthen the immune system and Vitamin B responsible for providing energy to cells.  It is rich in antioxidants to help prevent free radical damage. Coconut milk is rich in lauric acid, also abundant in mother’s milk, with has germ fighting, anti-fungal and anti-viral properties, helping to rid the body of viruses, bacteria and countless diseases.  

Vegan, Gluten-Free, Refined Sugar Free


1 cup water

1-2 tablespoons monk fruit sugar, or other natural sugar 


3 tablespoons lemon juice

½ teaspoon fresh ginger or ¼ teaspoon ground ginger

1 teaspoon vanilla

1 16-ounce package frozen unsweetened peach slices

¾ cup canned coconut milk

Fresh peach slices



1. In a medium saucepan combine water, sugar, lemon juice, ginger, and vanilla. Bring to boiling. Remove from heat; add frozen peaches. Let stand about 30 minutes or until peaches are thawed and mixture has cooled.


2. Add peach mixture, half at a time, to a blender container. Cover and blend until smooth. Transfer blended mixture to a 2-quart rectangular baking dish. Cover and freeze for 3 to 4 hours. Break up mixture with a fork; spoon into dessert dishes. Top with fresh peach slices. Makes 8 (1/2-cup) servings.
